Mandarins instead of the oranges. Easy, too! My hubby is yet to try it&#8230; hopefully he&#8217;ll like it :D I sure do!<\/p>\n<p><a href=\"\/food\/wp-content\/uploads\/2010\/09\/mandarincake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-255\" title=\"mandarincake\" src=\"\/food\/wp-content\/uploads\/2010\/09\/mandarincake-282x300.jpg\" alt=\"Mandarin cake\" width=\"282\" height=\"300\" srcset=\"https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2010\/09\/mandarincake-282x300.jpg 282w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2010\/09\/mandarincake.jpg 823w\" sizes=\"(max-width: 282px) 100vw, 282px\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<div>\n<ul>\n<li>Light olive oil spray<\/li>\n<li>3 mandarins (unpeeled, sweet is good)<\/li>\n<li>7 medium size eggs (or equiv.)<\/li>\n<li>3\/4 cup caster sugar<\/li>\n<li>300g hazelnut meal<\/li>\n<li>1tsp baking powder<\/li>\n<li>1\/2 cup shredded coconut<\/li>\n<li>Small handful of silvered almonds<\/li>\n<li>Extra caster sugar for dusting before baking<\/li>\n<\/ul>\n<\/div>\n<div><strong>Method<\/strong><\/div>\n<div>\n<ol>\n<li>Put mandarins in zip lock bags in microwave. Heat for 10 minutes on high.<\/li>\n<li>Preheat oven to 180\u00c2\u00b0C on &#8216;fan-forced&#8217; setting. Spray a cake tin with light coating of olive oil, line with baking paper, spray again.<\/li>\n<li>Let mandarins cool, then cut up, discarding seeds and pith. Put remaining fruit and skin in a blender, and blend until fairly smooth. Leave the mixture in the blender for now.<\/li>\n<li>Combine eggs and sugar in a bowl, whisking until blended.<\/li>\n<li>Place egg mixture, hazelnut meal, baking powder and coconut flakes into blender with mandarin. Blend until fairly smooth.<\/li>\n<li>Pour mixture into pre-lined baking tin, and sprinkle almonds over evenly and a little caster sugar.<\/li>\n<li>Bake for 1 hour, or until a skewer inserted into the centre comes out clean.<\/li>\n<li>Let cool, then serve.<\/li>\n<\/ol>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>I modified this awesome gluten-free cake recipe and made a similar one with mandarins, hazelnut meal &amp; coconut.
