I basically just added and added and came up with something awesome&#8230; I think so anyway! Heh.<\/p>\n<p><a href=\"\/food\/wp-content\/uploads\/2010\/10\/vegiesoup3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-272\" title=\"vegiesoup\" src=\"\/food\/wp-content\/uploads\/2010\/10\/vegiesoup3-224x300.jpg\" alt=\"Vegetable Soup\" width=\"224\" height=\"300\" srcset=\"https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2010\/10\/vegiesoup3-224x300.jpg 224w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2010\/10\/vegiesoup3-768x1024.jpg 768w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2010\/10\/vegiesoup3.jpg 777w\" sizes=\"(max-width: 224px) 100vw, 224px\" \/><\/a><\/p>\n<p><strong>Ingredients (makes about 3-4 litres of soup, can be re-heated)<br \/>\n<\/strong><\/p>\n<div>\n<ul>\n<li>2 x 400g cans of roma diced tomatoes<\/li>\n<li>1 x 400g can of red kidney beans<\/li>\n<li>1 large eggplant<\/li>\n<li>2 large carrots<\/li>\n<li>200g cup mushrooms<\/li>\n<li>200g kalamata olives<\/li>\n<li>A teaspoon of crushed garlic<\/li>\n<li>Small handful of rosemary leaves<\/li>\n<li>Small handful of dill tips<\/li>\n<li>Tablespoon of dried basil<\/li>\n<li>A dash of sweet white wine<\/li>\n<li>A dash of extra virgin olive oil<\/li>\n<li>750ml vegetable stock<\/li>\n<li>250ml beef stock<\/li>\n<li>All-purpose seasoning (Masterfoods brand is good)<\/li>\n<li>Salt<\/li>\n<\/ul>\n<\/div>\n<div><strong>Method<\/strong><\/div>\n<div>\n<ol>\n<li>Drain the red kidney beans, and rinse in cool water.<\/li>\n<li>Place beans and diced tomatoes in a large pot, and bring to the boil whilst adding the rosemary leaves and dill tips. Season generously with all-purpose seasoning.<\/li>\n<li>Bring heat of pot down to low and cover. Let sit, stirring occasionally whilst you dice the eggplant, carrots (peeled) and the mushrooms.<\/li>\n<li>Place the carrots in the pot and mix. Let sit, stirring occasionally.<\/li>\n<li>Heat a small amount of olive oil in a pan.<\/li>\n<li>Fry the eggplant, seasoning with a generous amount of all-purpose seasoning.<\/li>\n<li>When eggplant is browned, remove from heat, add to the pot and mix. Let sit, stirring occasionally.<\/li>\n<li>Add a little more oil to the pan. Fry the mushrooms, seasoning with a generous amount of all-purpose seasoning.<\/li>\n<li>Add garlic and wine to the pan and stir to mix with the mushrooms.<\/li>\n<li>When mushrooms are browned, remove from heat, add to the pot and mix. Let sit, stirring occasionally.<\/li>\n<li>Add dried basil to the pot and bring to the boil.<\/li>\n<li>Remove pot from heat, and process the mixture in a blender with the olives. Add the stock slowly to help the mixture blend into a chunky soup.<\/li>\n<li>Return the soup to the pot to reheat, bringing it to the boil. Add salt to taste.<\/li>\n<li>Serve, with rice crackers if desired.<\/li>\n<\/ol>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>I had a ball Friday night making this soup from scratch.
