You can experiment with the fillings too. I have spinach growing at the moment so hence why these have been a regular show on our family menu. The photo isn&#8217;t my best work but it&#8217;ll do heh.<\/p>\n\n\n\n<p class=\"has-text-align-center\"><img loading=\"lazy\" decoding=\"async\" width=\"150\" height=\"113\" class=\"wp-image-622\" style=\"width: 150px;\" src=\"https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-scaled.jpg\" alt=\"\" srcset=\"https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-scaled.jpg 2560w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-300x225.jpg 300w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-1024x768.jpg 1024w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-768x576.jpg 768w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-1536x1152.jpg 1536w, https:\/\/patmore.net.au\/food\/wp-content\/uploads\/2026\/04\/20260125_0913102-2048x1536.jpg 2048w\" sizes=\"(max-width: 150px) 100vw, 150px\" \/><\/p>\n\n\n\n<p><strong>Ingredients <\/strong>(makes 8)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 pre-made frozen puff pastry sheets<\/li>\n\n\n\n<li>1.5 cups Mexican cheese blend (my preference is <a href=\"https:\/\/www.perfectitaliano.com.au\/en\/products\/pi_mexican\" data-type=\"link\" data-id=\"https:\/\/www.perfectitaliano.com.au\/en\/products\/pi_mexican\">the Perfect Italiano Mexican blend linked here<\/a>)<\/li>\n\n\n\n<li>1 egg<\/li>\n\n\n\n<li>2 handfuls of fresh spinach leaves<\/li>\n\n\n\n<li>2 handfuls of cut button mushrooms<\/li>\n\n\n\n<li>1 tablespoon rock salt<\/li>\n\n\n\n<li>1 tablespoon dried orange leaves, chopped finely<\/li>\n\n\n\n<li>1 teaspoon dried rosemary leaves, chopped finely<\/li>\n\n\n\n<li>Olive oil spray<\/li>\n\n\n\n<li>1\/4 teaspoon lemon zest (optional)<\/li>\n<\/ul>\n\n\n\n<p><strong>Directions <\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 190C (fan forced).<\/li>\n\n\n\n<li>Defrost pastry sheets and cut each sheet into either two triangles (one diagonal cut) or two rectangles depending on your preference.<\/li>\n\n\n\n<li>In the centre of each cut sheet, equally distribute the spinach, mushrooms, cheese and oregano.<\/li>\n\n\n\n<li>Fold over the edges as desired and use a fork to press the edges together for decoration (<a href=\"https:\/\/external-content.duckduckgo.com\/iu\/?u=https%3A%2F%2Fwww.savorysweetspoon.com%2Fwp-content%2Fuploads%2F2023%2F01%2FClosing-Pork-Pastry-with-a-Fork-and-Egg-Wash.jpg&amp;f=1&amp;ipt=8f753bc21a773cfbb8be20eaa2250c3e28449c8f7bfdd1c5266351212c38582b\" data-type=\"link\" data-id=\"https:\/\/external-content.duckduckgo.com\/iu\/?u=https%3A%2F%2Fwww.savorysweetspoon.com%2Fwp-content%2Fuploads%2F2023%2F01%2FClosing-Pork-Pastry-with-a-Fork-and-Egg-Wash.jpg&amp;f=1&amp;ipt=8f753bc21a773cfbb8be20eaa2250c3e28449c8f7bfdd1c5266351212c38582b\">see here for an image of a similar pastry decoration<\/a>).<\/li>\n\n\n\n<li>Lay the pastries on baking trays lined with baking paper. Spray with olive oil, then using a pastry brush, brush each pastry with the egg (whisked). Sprinkle a small amount of rock salt, rosemary and lemon zest (use only half). Then, flip over the pasteries and repeat (spray, egg brush, and sprinkle the rest of the rock salt, rosemary and lemon zest).<\/li>\n\n\n\n<li>Bake for 30 minutes or until golden brown.
